Vegetable Box Delivery {Week 6}

Week 6 of our delivery and things are getting easier. I use the vegetables as the starting point to my menu plans, which I then build on using store cupboard and freezer stock; it’s no big revolutionary way to meal plan, but it’s a big change for our family……we’ve never eaten so many vegetables.

You may spot beetroot in the picture…help! what do I do with that?

It’s so pretty.
I just saw something about grilled beets. Looked good. They were sliced, wrapped in tin foil and butter.

Hi:
You could boil beetroot with the skin in in water, then let them cold, and then peel off. You could cut in cubes or in slices and add it on salad, or just beetroot with olive oil. I love it. Is spain you could find beetroot already boiled or canned beetroot.

if you boil your beetroot soft and slice (or, I guess, you could steam, pre-sliced), it’s wonderful in a mixed salad or sandwiches.
I adore fresh beetroot :-)

Laura, the one thing you have to watch with beets is that they turn some people’s urine red. So it may look as if you’re peeing blood. They don’t do this to me, but they do with my oldest son. My sister was babysitting him when it happened and she called me to get his health care number to take him to emergency… :-) I like them just boiled with butter.

I don’t see the beet tops? Why didn’t you get those along with the beets? I hope they don’t throw them out. They’re insanely nutritious and insanely good sauteed in olive oil and garlic – maybe some onions too.

roasted beets are meant to be delicious according to Jamie Oliver….. but salads would be the way to go for me…. so I guess you boil them then….

I always eat my beets from a jar….pickled! So I’m no help there. I think fashioning your meals around your veggies must be the healthiest way to eat there is! So not only good for you financially but your health will improve also!

Roast the beets wrapped in tinfoil in the oven for about 45 mins. Then peel, dice and toss with rocket, goat cheese and a balsamic vinaigrette. Delish! I wear gloves when I peel beets otherwise my fingers are stained pink for days. I have also read recipes to make red velvet cupcakes using beets but I have never done this myself.
